Chicken Tortilla Soup

Directions:

Boil the chicken, then shred it and set aside. Also, if you’d like, you can reserve the water used to boil the chicken as the chicken stock or you can use canned chicken stock (I prefer that).
While the chicken is boiling, roast the tomatoes, garlic and onions and boil the ancho pepper. When this is done, blend together the roasted tomatoes, garlic, onion and ancho chili.
Add the above mixture to the chicken stock and water with a small amount of oil and bring to a boil. When it comes to a boil, I add the potatoes (cut in decent sized chunks). Cook until potatoes are done.
While that is cooking, fry the tortillas in oil, set aside and salt to taste.
Lastly, put everything in a bowl and enjoy!
