Cherry Chocolate Cheesecake
Ingredients
For the Crust:
2 cups chocolate cookie crumbs (e.g., Oreo crumbs)
1/3 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz (2 packages) cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/2 cup sour cream
1/2 cup semi-sweet chocolate chips, melted and slightly cooled
For the Cherry Topping:
1 can (21 oz) cherry pie filling
1/4 teaspoon almond extract (optional, for extra flavor)
Instructions:
Prepare the Crust:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
In a medium bowl, combine the chocolate cookie crumbs and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of the prepared pan. Bake for 8–10 minutes, then let it cool while you prepare the filling.
Make the Cheesecake Filling: 4. In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix until combined.
5. Add the eggs one at a time, beating on low speed after each addition.
6. Stir in the sour cream, then gently fold in the melted chocolate until evenly incorporated.
Assemble and Bake: 7. Pour the chocolate cheesecake filling over the cooled crust and smooth the top.
8. Bake for 45–50 minutes, or until the center is slightly jiggly but mostly set. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
9. Remove the cheesecake from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
Add the Cherry Topping: 10. Before serving, combine the cherry pie filling and almond extract (if using). Spread the topping evenly over the chilled cheesecake.
Serve and Enjoy: 11. Slice and serve chilled for a decadent combination of rich chocolate and sweet cherries.
This Cherry Chocolate Cheesecake is the ultimate indulgence, pairing velvety chocolate with luscious cherries for a dessert that’s perfect for any occasion!
