
White Chocolate Blueberry Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup butter, melted
2 cups white chocolate chips, melted
3 (8 oz) packages cream cheese, softened
3/4 cup sugar
3 large eggs
1 cup fresh blueberries (plus extra for garnish)
1 tsp vanilla extract
1/4 cup heavy cream
Instructions:
Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter, press into the bottom of a springform pan to form the crust.
In a large bowl, beat cream cheese and sugar until smooth. Add melted white chocolate and vanilla, mixing until combined.
Add eggs one at a time, beating after each addition. Fold in heavy cream and blueberries.
