Ingredients:
For the Brownie Layers:
1 cup (225g) unsalted butter, melted
1 ½ cups (300g) granulated sugar
1 cup (200g) brown sugar
4 large eggs
1 tbsp vanilla extract
1 cup (120g) all-purpose flour
¾ cup (75g) unsweetened cocoa powder
½ tsp salt
For the Peanut Butter Cookie Dough Layer:
½ cup (115g) unsalted butter, softened
¾ cup (150g) brown sugar
¼ cup (50g) granulated sugar
¼ cup (60ml) milk
1 tsp vanilla extract
1 ½ cups (190g) all-purpose flour (heat-treated)
½ cup (125g) peanut butter
½ tsp salt
½ cup (90g) mini chocolate chips
For the Peanut Butter Frosting:
1 cup (225g) unsalted butter, softened
1 cup (250g) peanut butter
3 cups (375g) powdered sugar
¼ cup (60ml) heavy cream
For the Chocolate Ganache:
½ cup (120ml) heavy cream
1 cup (180g) semi-sweet chocolate chips
Instructions:
Preheat oven to 350°F (175°C). Line two 8-inch cake pans with parchment.
In a bowl, whisk melted butter, sugars, eggs, and vanilla.
Sift in flour, cocoa, and salt. Mix until just combined.
Divide batter between pans and bake for 25-30 minutes. Let cool completely.
Cream butter and sugars until fluffy.
Add milk, vanilla, peanut butter, and mix.
Stir in flour and salt, then fold in chocolate chips.
Beat butter and peanut butter until smooth.
Add powdered sugar gradually, then heavy cream. Beat until fluffy.
Place a brownie layer on a plate. Spread half the frosting.
Add the cookie dough layer and spread remaining frosting.
Top with the second brownie layer.
Heat heavy cream until hot but not boiling. Pour over chocolate chips. Let sit, then stir until smooth.
Drizzle over the cake and let it set.
